I have been looking forward to making this roast for quite some time now. The leaves are getting crisper, just like our new Autumn air and I’m moving on from light, airy salads to a bit more down-home cooking! Fall is finally here!
Why am I so excited? Well, to me the crisp Fall weather brings you back to the simple parts of life. Football games on a Friday night, pumpkin picking and apple orchards, thick, cozy sweaters, and comfort food. To stick with the true basics of Fall, I decided to keep my slow cooker pork roast simple as well. Rustic potatoes simmer with hearty carrots, onions, and celery underneath a lean pork loin roast marinating with the roasting vegetable flavors (and a little help from a convenient packaged pork seasoning mix). Using the slow cooker lets me carry on with my life and come home to a fork tender dinner that warms me up from the inside out.
There isn’t much to this recipe, so let’s get started! You’ll want to wash and scrub your potatoes (and cube them if you’re using a potato larger than a baby red), and cut your celery and carrots into chunks.
Once that prep work is done, you can start layering the potatoes, celery and onion chunks, baby carrots (you can use regular carrots, chopped into chunks if you prefer), and pork loin inside of the crock pot (with the vegetables on the bottom). I then added a packet of Pork Seasoning, prepared according to the package instructions.
Put on the lid and get going! Set the temperature to low, it will be done in about 7-8 hours.
At the end of the day, you’ll be welcomed home to the wonderful aroma of a pot of mouthwatering tender pork roast and veggies. Simply use a fork to tear off a piece of pork and serve yourself up a delicious dinner!

Simple Slow Cooker Pork Roast
- 2-3 lbs. Boneless Pork Loin Roast
- 1 lb. potatoes, cut into chunks (baby red, russet, sweet….your choice!)
- 1 cup baby carrots
- 1 large onion, chopped
- 4 celery stalks, chopped
- 1 package seasoning mix, prepared as directed (I used Crockery Gourmet Seasoning Mix for Pork)
- Layer the potatoes, carrots, onion, and celery in the bottom of the slow cooker. Place the pork loin on top of the vegetables.
- Prepare seasoning according to directions and add to slow cooker.
- Cover and cook on low for 7-8 hours or until the pork is fork tender and internal temperature reaches a minimum of 145⁰F.
